Mix a filling of minced pork, chopped shrimp, soaked glass noodles, rehydrated wood-ear mushroom, grated carrot, shallot and egg, seasoned with fish sauce and pepper. Briefly dip a rice-paper wrapper to soften, add a spoon of filling, fold the sides in and roll up tightly. Fry in medium-hot oil — gently at first, then hotter — until deep golden and crisp.   • 150 g raw shrimp, chopped
  • 50 g glass (bean thread) noodles, soaked and cut
  • 2 tbsp wood-ear mushroom, soaked and chopped
  • 1 carrot grated; 2 shallots; 1 egg; 1 tbsp fish sauce; pepper

  • Rice paper wrappers (bánh tráng)
  • Neutral oil, for frying

  • Lettuce, mint, perilla, cilantro
  • Nước chấm (fish sauce, lime, sugar, water, garlic, chilli)

Préparation

    Combine the pork, shrimp, drained glass noodles, wood-ear, carrot, minced shallot, egg, fish sauce and pepper. Mix well; fry a tiny bit to taste and adjust seasoning.

    Dip a rice-paper wrapper briefly in warm water (or brush it) until just pliable — it keeps softening as you work, so don't over-soak.

    Place a tablespoon of filling near one edge, fold the sides in over it, and roll up snugly into a slim cylinder. Don't overfill. Repeat with the rest.

    Heat oil to medium and fry the rolls, not crowding, until they firm up and the filling cooks, turning. Then raise the heat to crisp and deepen the colour to golden brown. Drain on paper.

    Serve hot with a platter of lettuce and herbs and a bowl of nước chấm. To eat, wrap a roll in a lettuce leaf with herbs and dip into the sauce.

Make ahead

Roll them ahead and freeze uncooked in a single layer, then bag — fry from frozen for the crispiest results, making them perfect party food. The filling can be mixed a day ahead. Prep the herbs and nước chấm fresh.

Storage

Best fresh and crisp. Fried rolls keep a day; re-crisp in a hot oven or air fryer (not the microwave, which makes them soggy). Uncooked rolled spring rolls freeze excellently — fry straight from frozen, which keeps them extra crisp.

What wrappers do I use for chả giò?
